Anticosti Island whitetail, one of the species headed for dinner plates this fall.
Starting in the autumn of 2014, diners at 10 specially selected Quebecois restaurants will be able to select native species of game. In a pilot project created by Quebec’s Wildlife Ministry, whitetail deer, squirrel, hare, muskrat and beaver are just some of the species that will be available to the participant restauranteurs and chefs.
