Mattagami 1 Year – Fromagerie Kapuskoise

Made in Kapuskasing, Ontario, this is a hard cheese, aged for one year. The name is a nod to one of the many rivers that flow through the region. It has a crumbly curd and pleasant balance of acidic and savoury flavours.
