Mattagami Chevre – Fromagerie Kapuskoise
Made in Kapuskasing, Ontario, this is a hard cheese aged for six months. The name is taken from one of the many rivers that flows through the region. This is a goat milk version of the Mattagami. This goat variety has a younger, creamier paste with slightly sweet and floral, grassy notes.
