A product of the Auvergne in the central region of France, this rustic farmhouse cheese is made from the raw milk of cows who graze on rich, volcanic soil. he resulting flavours are rich and complex, earthy and buttery. The natural rind gives a musty aroma with notes of straw and mushroom.
