Valençay

A classic chèvre from the Loire Valley in the shape of a pyramid. The mouldy rind is covered in a dusting of vegetable ash, giving it a distinctive metallic-grey appearance. The paste is snowy white and moussey. The centre of the cheese can become more fudgey or chalky as is ages. The aroma fills the nose with earthy and caprine notes, and the flavours can range from fresh and lemony when young, to more spicy and animal as it develops.
