St. Paulin
A Trappist cheese produced in Normandy, from pasteurized milk delivered to the monastery from neighbouring farms. The rind is washed, producing a soft golden-orange colour. The paste is pale ivory, with notes of butter and nuts, with mild a mild aroma.
