Kirkham’s Lancashire – Mature

This is the last traditional, raw milk Lancashire still being made. The third generation cheesemaker uses high quality milk from the family farm to make this tangy, cheese with its trademark “buttery-crumble” texture. This is the mature version, aged at Neal’s Yard Dairy in London, so the flavour has a nice level of acidity and a bit of a bite.
