Shropshire Blue

A creamy and rich blue cheese. The paste is milky with a slight acidity, and the blue veining is salty with a pleasant spicy note. Shropshire Blue makers use the same recipe as Stilton, with the addition of the flavourless colouring derived from annatto seeds which gives it a distinctive bright orange colour.
