Tomme de Chambrille
This lactic Tomme is crafted from fresh, whole goat’s milk in the classic Poitevin tradition. After being coated in ash, it ripens for 3 to 8 weeks. Its name draws from a 19th-century legend in a village near La Mothe Saint Héray, where an ill-fated romance unfolds between Berthe, the daughter of a chateau owner, and Guy, who resides in the neighboring chateau by the Chambrille stream.
