Saba / Vincotto – Cooked Grape Must – Bellei

Bellei Saba / Vincotto is a traditional Italian sweet, dark amber syrup made by simmering unfermented fresh grape must.  Its flavour profile is thick, rich, and intensely fruity with notes of raisin, caramel, and honey.  Unlike balsamic vinegar, saba is not fermented and contains no vinegar acidity.
