A firm, washed rind cheese with characteristics of Gouda and a Swiss mountain cheese, made from the milk of the family’s own herd of cows. It is aged for eight months on cedar planks which impart a slightly piney flavour, with a hint of sweetness.

Available by the wheel, the half-wheel, or as a case of retail units.
