Soft, bloomy rind farmstead goat cheese from Lanaudière, Quebec. Formed into a log shape, made in the tradition of lactic French goat cheeses from the Loire valley. The interior paste can be chalky or crumbly, and softens up when ripe to form a creamy, mushroomy layer under the rind. Occasional spots of blue penicillium mould is not uncommon to find on the rind, and add an earthy complexity to the flavour.
