Bleu des Basques

Bleu des Basques is a pasteurized sheep milk cheese from the Basque Region of France. It is a firm, aged, blue cheese with a natural rind. This cheese is distinct from most other French blues as it’s maturing process does not include brining, leading to a far less salty flavour.
