Camembert Marie Harel
Marie Harel is said to be the creator of camembert cheese. Her descendents are particularly known for creating the wooden box that we are so familiar with today. This pasteurized version has all of the characteristics of a traditional cheese. The bloomy rind serves to provide a subtle contrast to the savory interior and helps give it its smooth consistency. To ensure the cheese develops a rind worthy of a Camembert, it is mixed with a yeast culture during the coagulation.
