Ermite

A semi-firm blue cheese made at the Abbey de Saint-Benoit-du-lac. There is a thin layer of mould covering the otherwise rindless cheese. The paste is firm, slightly crumbly and becomes softer as it ages. Aromas are earthy, the flavours are of mushroom, hazelnut and a hint of spice from the blue, and a medium saltiness.
