Fougerus

This is a soft ripened cheese made by the Rouzaire cheesemakers, aged for about 4 weeks. It is said to be similar in style to a camembert but offers milder vegetal and mushroom flavours. Tasting notes are creamy, buttery, and salty and it is topped with a Fern leaf that gives it an herbaceous aroma.
