A semi-firm cheese with an orangey-yellow washed rind. In the of a cooked and pressed mountain cheese, the paste is elastic and smooth, with small holes throughout. The flavour is sweet and nutty. Made by Benedictine Monks at Abbaye de Saint-Benoît-du-Lac, Quebec.
