La Tomme de Chevre Brebis

Using the milk from the mountains of the Basque region of France. The cheese is made with 60% cows milk and 40% sheep milk . The rind is natural, with a pale, dusty yellow colour.  The paste is firm but smooth, with friuty and nutty notes.  Its texture varies from creamy to firm depending on the aging process.
