Lincolnshire Poacher

A hard British farmhouse cheese that has characteristics that meet somewhere between a Cheddar and a Swiss mountain cheese. The flavours can range from fruity and nutty, to brothy and savoury. The paste is supple, chewy and golden yellow, with eyes much like you’d find in a Swiss cheese. Selected and aged by Neal’s Yard Dairy in London.
