Moulard Duck Magret (breasts) – Hudson Valley
Hudson Valley Farms, located in Saint-Louis-de-Gonzague, a town of the Haut-Saint-Laurent, in Quebec employ a French production technique for raising Moulard ducks that was imported in 1994 by two producers from the South-West of France. The ducks are raised in group pens with space for movement and are hand fed in small groups. The Moulard is a hybrid – a cross between a Muscovy and Pekin duck. The Moulard inherits the best traits from each of its parents: hearty, lean meat with a one of a kind rich duck flavour. The duck breasts are boneless with the skin on and average between 300g and 400g each.
