Raclette de Compton – Pink Pepper

A farmstead cheese made form Organic milk in Compton, Quebec. The semi-firm, smooth, pale gold paste melts perfectly, and the flavours are of butter and chestnut. This version is complimented by a line of organic pink peppercorns through the centre of the paste, whose flavour is released when the cheese is heated.
