From the Saguenay-Lac-Saint-Jean region comes a soft cheese made exclusively from the milk of Brown Swiss Cows, which produce milk ideal for cheesemaking. The cheese has a mixed rind covered in a gentle, bloomy white mould. The texture is tender and giving, and the flavours are mild, milky and sweet.
