Shropshire Blue Colston Basset
Made using the same recipe as the Colston Basset Stilton, but with the addition of annatto colouring to make it bright orange. The colouring is said to soften the texture, but has little to no effect on the flavour, which is salty and creamy with a hint of spice from the blue. The recipe prepared especially for Neal’s Yard Dairy is made with animal rennet, and is pierced fewer times which allows the paste to develop more complexity and milder blueing.
