Zacharie Cloutier

An unpasteurized sheep milk sheep cheese aged for six months, coming from the Eastern-Townships of Quebec. The paste is semi-cooked, smooth and supple, with a flowery aroma and buttery, caramel flavours. The rind is washed, and marked with a zig-zag design, a nod to similar Spanish sheep cheeses with the same design.
