Ibores PDO

The milk for this cheese comes from herds of migrating Verata and Retinta goats feeding on wild vegetation in the Estremadura region of Spain. It is a semi-firm cheese whose rind is brushed with paprika. The flavours are herbal, grassy and tangy, with a hint of spice from the rind.
