Beemster XO Quarter

A well-known and beloved dutch Gouda-style cheese. The XO is aged for 26 months, is firm and has a pleasing amount of mineral crystallization through the orange paste. The ageing process has enhanced the flavours, intensifying the malty sweetness and nutty, butterscotch flavours, balancing well with the medium saltiness of the cheese.
