Soft, pungent cheese with a white, yeasty bloomy rind that can develop a reddish hue. The paste is soft, and when ripe can be quite bold, with cooked cream and animal flavours and aromas. Named for the Artist Marc Séguin who has a strong connection with the island where the cheese is produced, Isle-aux-Grues, Quebec.
