Bleu d’Affinois

A modern cheese made by the French cheesemaker who first adopted the ultrafiltration system for cheesemaking. Bleu D’Affinois is a soft bloomy rind cheese with added cream, made unique by the addition of a blue mould running through the centre of the paste. The aroma is mild, and the flavour is salty, with a mild blue flavour and notes of cream.
