One of the most beloved French cheeses, said to have been developed by the wife of a dairy farmer in 1791. Made with raw milk, it has a bloomy rind, with a creamy interior that can range from chalky in the center to uniformly smooth throughout when ripe. Fruity, with a subtle mushroom and mold aroma.
