Iberico 12 month

A semi-firm cheese made from a blend of cow, sheep and goat milk. The ratio of milks used changes depending on the seasonal availability of each milk. The paste is smooth, pale and marked with small holes throughout. The rind is marked with a pattern similar to Manchego. The 12 month version has an inedible purple coating on the rind.
