Noyan

Named after the small town it hails from, the Noyan is a semi firm washed rind cheese whose straw colored rind shows slight reddish hues and mild blooming. The pale, supple paste has a nice bounce and displays small openings throughout. It boasts well balanced, cream forward lactic flavors with notes of fresh cut mushrooms and mild savory finish.
