A complex cheese in terms of flavor, aged for a minimum of 18 months, developing rich, deep flavors of bourbon, caramel, and pecan undertones with a firm and crumbly texture and lots of ripening crystals. Encased in a deep red wax and adorned with the instantly recognizable Old Amsterdam logo.
