Peribonka

Made by La Fromagerie Normandinoise north of Lac St-Jean in central Quebec, the Peribonka is a small, soft mixed rind cow’s milk cheese.

The rind orange due to the wash with a white bloom growing partially over it for a beautiful result. The paste is yellowish in color, creamy to runny when it’s at room temperature. Its salty, lactic, and somewhat rustic taste offers delicious hints of root vegetables.
