Pied-de-Vent

Hailing from the windswept Îles de la Madeleine (The Magdalen Islands) in the Gulf of the St. Lawrence comes a farmstead cheese made from the thermized milk of single herd of Canadienne cows. The cheese has a washed rind and a soft paste which becomes more runny as it ripens, and the flavours are subtly complex, wth earthy, mushroomy notes.
