Sainte-Maure de Touraine
A raw milk, lactic goat cheese hailing from the Loire. The cylindrical form is covered in a blooming rind coated in vegetable ash. The flavours are caprine, grassy and lightly salty. The texture of the paste ranges from silky under the rind to fudgey in the centre. A straw runs through the cheese to aid in uniform ripening and maintaining the structure.
