An organic, raw milk cheese from Compton, Quebec. A firm cheese with an light orange washed rind, a flowery, hazelnut flavour and a smooth, supple texture. Named in honor of the cheesemakers’ farming ancestor. This 18 month version of this classic cheese is only available periodically.
