A semi-firm, washed rind cheese made in the Charlevoix region of Quebec. Made from the milk of the Canadienne breed of cows and named for the year the ancestors of this breed of cattle was first brought to Canada from France. The cheese expresses the nature of their rich, high quality milk. A golden-yellow paste with lively notes of fermenting fruit and a long finish.
