L’Origine de Charlevoix

Aged for just shy of a month, this surface-ripened soft cheese, though milder is aroma and flavour, is reminiscent of Reblochon. The flavours are of butter and there are slightly vegetal and hazelnut notes. The milk comes exclusively from the Canadienne breed of cows. The cheese the name is a nod to the geographic formation of the region, which was shaped by a meteor strike 350 million years ago.
