Miranda

The Miranda is a firm, somewhat brittle cheese with a washed rose-and-copper colored rind. It emits a scent of nuts and damp straw creating a pleasant musk and its pale yellow paste bears small openings throughout. In terms of flavor, deep earthy tones meld with notes of chestnut and a slight spiciness.
