Mont-Jacob
A semi-firm cheese with a sticky, pale pink washed-rind, named for a local landmark in Jonquière, Quebec where the cheese is made. A well balanced cheese, with a buttery texture and mild to pronounced lactic, vegetal and fruity flavours, medium salt and a hint of spice on the rind.
