Hailing from the windswept Îles de la Madeleine (The Magdalen Islands) in the Gulf of the St. Lawrence comes a farmstead cheese made from the thermized milk of single herd of Canadienne cows. The cheese has a washed rind and a soft paste which becomes more runny as it ripens, and the flavours are subtly complex, wth earthy, mushroomy notes.

Note: This cheese is unavailable until the end of summer, as a result of peak tourist season on the island.
