Rassembleu

A firm blue cheese made in the Laurentian region of Quebec. The milk used is organic and is provided by the farm’s own herd of cows. The rind is rustic and natural, and the paste is fudgy and firm, with bright flavours coming from the bluing, with hints of caramelized cream.
